Ingredients
For the Dough
2 cups whole wheat flour (or multigrain flour)
1 tablespoon oil
Salt to taste
1 teaspoon red chili flakes (or black pepper)
1 teaspoon dried fenugreek leaves (Kasuri methi) or chopped fresh coriander
Water as required
For the Filling
1 teaspoon oil
1 teaspoon cumin seeds
1 teaspoon ginger-garlic paste
1 small onion, finely chopped
½ teaspoon turmeric powder
½ teaspoon red chili powder
½ teaspoon chaat masala (or dry mango powder/lemon juice)
Salt to taste
1 cup finely chopped spinach
2 boiled potatoes, grated
For the Coating
Reserved wheat flour
1 tablespoon white sesame seeds
Water as needed
Step 1: Prepare the Dough
Take the whole wheat flour in a large mixing bowl. You can also use multigrain flour if you prefer.
Add:
Oil
Salt
Red chili flakes
Kasuri methi
Mix everything thoroughly so the oil and spices are evenly distributed throughout the flour.
If you prefer, you can replace whole wheat flour with all-purpose flour (maida).
Reserve a small portion of the flour for later.
Gradually add water and knead the remaining flour into a firm dough. The dough should be slightly firmer than regular chapati dough.
